Everyone's aware of the classic chocolate + coffee pairing, and we're no different. What type of coffee roastery doesn't stock a chocolate-forward tasting coffee at all times you ask? Terrible ones. But luckily for you we're the exact opposite of that.
This Guatemalan coffee is roasted dark (but not too dark!) in small batches so we can control the temperature throughout the process. By lowering the temperature at the right time, we can extend the duration of the roasting time, consequently extending the Maillard reaction (the "fancy" term for essentially the developing of flavors). What you're left with is a coffee that's densely packed with rich chocolate flavor and brown sugar, with a touch of some complementing fruity pear flavor.
